14 April 2022 – The Lanesborough, London is delighted to announce the opening of The Lanesborough Grill, the hotel’s new flagship modern British restaurant, on Monday 25th April 2022 with acclaimed British Chef, Shay Cooper at its helm.

One of the UK’s most celebrated chefs, Shay’s stellar record has seen him earn The Bingham Hotel in Richmond a Michelin star, repeating this success as Executive Chef at The Goring, when the hotel was awarded its first Michelin Star during his tenure. In 2020, Shay was the launch chef for the reopening of the iconic Notting Hill Restaurant Julie’s; again, gaining rave reviews for his modern and subtly sophisticated take on traditional British cooking.

The Lanesborough, a masterpiece among London’s five-star hotels, is housed in a Regency townhouse of the grandest order. The Lanesborough Grill is located in a richly decorated dining room, naturally illuminated during the day by a domed glass roof while seductively aglow under softly lit chandeliers in the evening, making the perfect new home for this talented chef.

Shay Cooper says: “Our vision is to take the combination of tradition and innovation to create a compelling contemporary offering, using the very best of British produce to deliver unforgettable dining experiences in one of London’s most beautiful and atmospheric Regency dining rooms. It’s important that our guests enjoy more than just great food and drink – we want to infuse fun and creative elements and, of course, a sense of high glamour.”

He adds: “London is one of the world’s most established and diverse restaurant markets and it is a very exciting time to be launching a new restaurant concept.”

The Lanesborough Grill will showcase a seasonal modern British à la carte menu championing regional artisans and the very best of seasonal produce from around the country. Dishes will change frequently with key signature dishes served tableside on Gueridon trolleys, creating a sense of restaurant theatre. In addition, there will be a set menu available at lunch and dinner.

Starters:
Coronation crab salad, curry leaf sabayon

Buttermilk fried quail, mushroom, spring salad and chicken vinaigrette

Orkney scallop, blood orange, monks beard, Jerusalem artichoke

Hereford beef tartare, potato crisps, cured egg yolk, truffle, and sherry dressing

Main Courses:
Roast turbot on the bone, potted shrimp bearnaise

Beef Wellington, royale chestnut mushroom, oxtail, and bone marrow potatoes

Poached native lobster cooked with spring radishes, broad beans, peas, lemon verbena butter

Dover Sole, preparation – Grilled or Meunière

Desserts:
Yorkshire rhubarb trifle, earl grey custard, millionaire shortbread

Treacle tart, apricot preserve, natural yoghurt sorbet

Scottish raspberry souffle, all butter shortbread, lemon verbena ice cream

Manjari chocolate ganache, pecan praline, buttermilk caramel, crème fraiche ice cream

To perfectly accompany this exquisite new food offering, there is an extensive new wine list, pre- and post-dinner drinks menu in the cosy, firelit Withdrawing Room and Library Bar, or the option for excellent post-dinner cigars in the heated outdoor terrace, The Garden Room.

The Lanesborough Grill will also exhibit the work of some of the most exciting contemporary artists in the UK. In partnership with Art Acumen, pieces displayed by Britain’s leading art talent will be available for purchase, with a curation of new artworks being unveiled every six months. Art Acumen is a leading specialist art consultancy with 20 years of experience curating and commissioning art collections, programming bespoke creative events, and place-making through public art programmes.

A REGENERATIVE FARM STAY SHAPED BY SEASONS, FRIENDSHIP AND CRAFTSMANSHIP

Sibbjäns began quietly, the combined dream of Jonas Nordlander and Sanna Rönn, who with close friends and many meaningful couples Pontus and Kina Zeidler share a life between Stockholm and Gotland. Over the past four years, they have steadily transformed this former horse farm into a regenerative stay that feels singular to anywhere else in Scandinavia.

After a soft opening in 2025 for friends and family, the farm stay now enters 2026 as its first full season, opening more intentionally to a like-minded global community drawn to nature, food, and thoughtful design.

 

A PLACE TO REST

 

22 individually designed rooms sit across the Hotel and ‘The Bunkhouse,’ each named after important women in the family and among their friends. Adorned with classic Scandi touches of sheepskin throws, limewashed walls, soft palettes, and contemporary art, the spaces are designed for comfort.

Buildings are framed by wildflowers and constructed using traditional methods, much of the work completed by hand, with local craftsmanship central to the process. Architect Maja Berg has been a key contributor, working alongside Erik Larsson, a Master of Gotlandic Craft Heritage, who built some of the original buildings himself and continues to pass on traditional building knowledge to the next generation.

THE KITCHEN FOLLOWS THE FARM

At the heart of Sibbjäns is a working farm home to hens, Mangalitza pigs, horses, and sheep, with agriculture guiding both the kitchen and the guest experience.

In the gardens, lead gardener and local Karin Winarve brings a quiet hand to what thrives here across meadows, vegetable beds, and fruit-growing plots. Produce is grown on-site and harvested seasonally, forming the backbone of a true farm-to-table approach—one that pauses entirely during the winter months when the land rests.

 

EXPERIENCES & ‘VIKING WELLNESS’

New for the 2026 season, wellbeing at Sibbjäns is restorative rather than prescriptive. Inspired by Nordic traditions and the physicality of outdoor life, the evolving wellness offering includes:

  • A hand-built yoga barn

  • A wood-fired sauna

  • An outdoor gym

  • Recreational spaces

  • The beginnings of what will become one of the world’s most beautiful tennis courts.

The surrounding landscape invites guests to engage with nature on its own terms, from cycling or horse riding across open farmland to kitesurfing along Gotland’s windswept coastline (widely regarded as one of the finest spots in Europe for the sport). This is ‘Viking wellness’ in spirit—elemental, grounding, and quietly transformative.

 

SWEDEN’S ‘SUNSHINE ISLAND’

Gotland is Sweden’s sunniest destination, known for its distinctive light, limestone landscapes, and strong ‘right to roam’ ethos. Open from Easter through to Christmas and closed entirely during the dark winter months, Sibbjäns follows the natural calendar rather than resisting it.

Reaching it is part of the journey:

  • A short flight from Stockholm to the island’s capital of Visby, followed by a drive across the island.

  • A ferry crossing that reinforces the sense of arrival somewhere distinct and deliberately unhurried.

  • For those preferring a more direct approach, arrival by helicopter is also possible.

At its core, Sibbjäns remains a place for friends old and new built slowly, grounded in nature, and designed to endure.
