FINCA CORTESIN REVEALS NEW JAPANESE RESTAURANT, REI

Heralded as being home to some of the best Japanese cuisine outside Japan, the award-winning Finca Cortesin on Spain’s Southern coast has unveiled REI, brand-new Japanese restaurant. REI serves exquisite traditional Japanese cuisine, Asian-fusion and Mediterranean-inspired dishes of the highest quality, working primarily with seafood and raw ingredients, and with all produce sourced locally, in line with the hotel’s ‘0km’ ethos.
In Japanese culture, the name ‘REI’ refers to thanks, gratitude, courtesy and reward. The newest addition to Finca Cortesin’s cast of excellent restaurants offers a traditional Japanese menu with a thoughtful, curated selection of delicious dishes all made-to-order. Dishes are prepared in a unique open kitchen setting for guests to admire the young Chef, Luis Olarra, at work. Olarra combines the finest seafood and raw materials with local produce grown in the area, from sustainable fisheries in the local Straits to organic produce from the hotel’s own vegetable garden. Sustainability paired with technical, elegant and harmonious processes are fundamental to the culinary process.
The menu features signatures dishes such as Galicia Razor Clams in sashimi with a smoked avocado emulsion, lime zest, yuzu air and finished with pea shoots; Blue Fin Almadraba Tuna Belly Tartar with dashi jelly, flakes with smoked dried bonito and beluga caviar; and Turbot marinated in white miso, cooked in Josper and accompanied by organic seasonal vegetables. Chef Olarra explains the inspiration behind the delectable menu as being “…based on gratitude; gratitude to the local seasonal product and passion for Asian gastronomy and Japanese cooking techniques,” as inspired by Confucius: “If you serve nature, she will serve you,” embodying the modern Japanese restaurant concept.
From March 17, REI offers a dinner service between Tuesday and Saturday that will extend to Tuesday to Sunday during the summer months of July and August.
Located 25 minutes from Gibraltar and 50 minutes from Málaga airports respectively, Finca Cortesin is easily accessible and the perfect place to stay when visiting Andalusia.
