INNOVATIVE NEW RESTAURANT AND BAR - FRITZ & FELIX - TO OPEN AT BRENNERS PARK HOTEL & SPA

The stylish new restaurant and bar will transform the food scene in the region, offering a refreshing new destination for casual, elegant drinks and dining

The innovative new concept will be a destination restaurant and bar for hotel guests and local residents alike that is inspired by the nature, history and culture of the Black Forest with a throwback to the glamour of the 1920s. The style will be sophisticated yet refined and informal – creating a fun, social atmosphere.

Fritz & Felix will be overseen by culinary advisor Nenad Mlinarevic – the young, wild and unconventional Swiss chef who is considered the shooting star of the German and Swiss culinary scene. His appeal will target a younger audience looking to sample interesting food experiences around the world.

Sebastian Mattis will take on the role as Chef de cuisine. He will take up the challenge of combining regionalism with round-the-world influences in Fritz & Felix. His credo is: professionalism, creativity and the highest specialist standards can be wonderfully arranged with a relaxed approach and a modern sharing style.

The innovative design concept has been created by Robert Angell – whose work includes the Blue Bar at the Berkeley and the American Bar at the Savoy – as well as London based Gorgeous Group. Together they have created a distinctive interior with inspiration taken from the hotel’s spectacular Black Forest setting – its enchanting scenery as well as historic culture. The new design will embrace the emotional connection that many have with the hotel and local area and it will look back at Baden Baden’s glamorous past whilst creating a new luxurious yet accessible future.

The restaurant and bar will implement a casual, fine dining concept and an experience for local and international clientele who value a modern, urban lifestyle. The menu will be simple with seasonal small plates, sharing plates for the table and specialities from the grill. Food will be locally sourced and oriental towards the seasons, with priority given to fresh fruit and vegetables.

The 1920s café society inspired interiors evoke a style that is relaxed and simple yet luxurious and elegant. Many features will be a tribute to this ‘golden era’ when automobile clubs and high society came together at Brenners Park. The colours will be inspired by nature reflecting the changing seasons as well as other details that are found in the area – from a contemporary take on traditional dress of the Black Forest to details found in vintage cars. The overall feeling will be a club-like atmosphere where people come to relax and be indulged whether it’s for a drink, some small plates, a special celebration or dinner with friends.

A native of Baden-Baden, Julius Hilger even completed his apprenticeship in hotel management at Brenners Park-Hotel. Hilger has accompanied the pre-opening phase of Fritz & Felix where in future diners will get to know him as the restaurant manager.

Head Barman Jean-Pierre Muyombano will mix his own creations, interpreting classic cocktails with a modern touch. As well as his travels around the globe, Muyombano will draw inspiration from the local plant life in the Black Forest creating a delicate balance between local products and far-flung ingredients. Signature drinks will include homemade vermouth and Riesling gin, Black Forest Bear with its Bonpland Rum Rouge and Bärenjäger honey liqueur components, Brenners Cooler comprising Monin Bitter, vanilla rooibos tea and tonic water and a selection of original beer-based cocktails. The wine list will have an extensive selection by the glass, hand crafted beer, speciality barrel aged cocktails and small but carefully curated selection of locally made vermouths and liquers.

The restaurant is set to open in late autumn 2018.
