CELEBRATING FIFTEEN YEARS OF FINE DINING AT BAROS MALDIVES

Opened in 2005, the iconic Lighthouse Restaurant at Baros Maldives is celebrating its 15th anniversary with a special six-course ‘Anniversary Degustation Menu’, including an eclectic selection of succulent local seafood, prime meat and modern classics infused with exotic Maldivian spices for an elevated dining experience. The resort’s chef, Nathif, has chosen a selection of guests favourite dishes to create the tasting menu, including The Cognac Flambéed Lobster Bisque which is prepared table-side from the Guéridon. Other highlights include Kadaif Pastry Wrapped Tiger Prawns with Lime tossed Mizuna, Daikon and Cucumber and a choice between Grilled Yellow Fin Tuna Steak with Pan Fried Duck Foie Gras and Seared Medallions of 300-Day Grain-Fed Black Angus Beef Fillet. An array of fine wines are available to order alongside the menu, and to ensure flavours are best complimented, the resident sommelier will be on hand to assist guests with individual wine pairings. For dessert, guests can opt for either a decadant Flourless Chocolate Fudge Cake served with Lavender Macaroon and Café Gelato, or Exotic Asian Fruits Flambéed in Spiced Rum which is cooked at the table and served with  Mango Yoghurt Ice Cream.

The Lighthouse menu has evolved over the years as Head Chef, Nathif continually seeks to improve his delectable food offerings and understand guest desires. Such culinary excellence has been recognised and Nathif and the team have received several prestigious awards over the years. Chef Nathif comments, “I am very proud of what we have achieved and we value every award we have received. However, the most valued award for our team is to have guests returning to dine with us. It is merely the best encouragement and acknowledgement when guests come back to the Lighthouse every day during their stay. It is not just the food, it’s also the setting and the team that make the dining experience exceptional.”
